Description
Chicken skewers marinated in lemongrass, lime, garlic, and spices, then grilled until lightly charred and served with a creamy peanut sauce.
Ingredients
Chicken
- 1 lb chicken breast, cut into ½-inch cubes or slices
- 2 tbsp finely chopped lemongrass
- 2 tbsp canola oil
- 2 tbsp brown sugar
- 2 tbsp lime juice
- 2 tbsp garlic paste
- 2 tbsp fish sauce
- 2 tbsp low sodium soy sauce
- 2 tbsp sriracha
- 1 tbsp ginger paste
- 1 tsp turmeric
- 1 tsp coriander
- 1 tsp kosher salt
Peanut Sauce
- ½ cup crunchy peanut butter
- ¼ cup low sodium soy sauce
- 2 tbsp rice vinegar
- 2 tbsp honey
- 1 tbsp toasted sesame oil
- 1 tbsp sriracha
- 1 tbsp lime juice
- 1 tbsp garlic paste
- 1 tsp ginger paste
- ⅓–½ cup warm water (to thin)
Optional Garnish
- Lime wedges
- Crispy shallots
- Fresh chives
- Flaky salt
Instructions

In a bowl, combine the lemongrass, canola oil, brown sugar, lime juice, garlic paste, fish sauce, soy sauce, sriracha, ginger paste, turmeric, coriander, and salt.

Add the chicken and toss to coat evenly. Cover and refrigerate at least overnight.

Thread the marinated chicken onto bamboo or metal skewers.

Preheat your Traeger grill to 450°F.

Grill the skewers for 10 minutes per side, or until the chicken reaches an internal temperature of 165°F.

In a bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, sriracha, lime juice, garlic paste, ginger paste, and warm water until smooth and pourable.
