Description

A deeply flavored hibiscus syrup with subtle wood-fired notes. Beautiful in cocktails, iced tea, lemonade, or drizzled over desserts.

Ingredients

Instructions

1.

Preheat your grill to 225°F. If available, use a Super Smoke setting.

2.

Place the hibiscus flowers in a disposable aluminum half pan and pour in 12 cups of water.

3.

Place the pan on the grill and smoke for 3½–4 hours, or until the liquid has reduced by half.

4.

Remove from the grill and strain the liquid through a fine mesh strainer to remove the hibiscus flowers.

5.

While the liquid is still hot, stir in 6 cups of white sugar until completely dissolved.

6.

Transfer the mixture to a saucepan and place on the stovetop.

7.

Simmer gently and reduce the syrup by an additional ⅓ to concentrate the flavor.

8.

Remove from heat and allow to cool to room temperature.

9.

Transfer to sealed containers and refrigerate for future use.

Refrigerate in airtight containers for up to 3 weeks.
