Ingredients
- 1 (3–5 lb) whole bologna chub
- 2 tbsp yellow mustard or olive oil
- ¼ cup pork and poultry BBQ rub
- 1 cup BBQ sauce
- 2 tbsp brown sugar
- 2 tbsp honey or hot honey (optional)
Instructions
1.
Preheat your Traeger grill to 250°F.
2.
Cut the bologna into 1½–2 inch cubes and lightly score the surface of each cube.
3.
Toss the cubes with mustard or olive oil. Season evenly with BBQ rub.
4.
Place the cubes on a wire rack or directly on the grill grates. Smoke for 1½–2 hours, until the edges begin to crisp.
5.
Transfer the cubes to a foil pan or grill-safe skillet. Add BBQ sauce, brown sugar, and honey. Toss to coat.
6.
Return the pan to the grill and increase temperature to 275°F. Cook for 30–45 minutes, until the sauce becomes thick and sticky.
Serving
Serve warm as appetizers, sliders, or with pickles and bread.
