Ingredients
- 12 jalapeños, seeded and halved
- 1 (8 oz) package cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1½ cups shredded sharp cheddar cheese
- ¼ sweet onion, finely diced or grated
- 1 tbsp roasted red pepper and garlic seasoning
- 1 tsp garlic powder
- 1 tsp chipotle chili powder
- 2 tbsp hot sauce
- 24 Lil Smokies or other precooked mini sausages
- 24 slices thin center-cut bacon
- Pork and poultry rub, as needed
Instructions
1.
In a bowl, mix together the cream cheese, mozzarella, cheddar, onion, roasted red pepper and garlic seasoning, garlic powder, chipotle chili powder, and hot sauce until well combined.

Fill each jalapeño half with 2–3 teaspoons of the cheese mixture.
3.
Place one mini sausage on top of the filling in each jalapeño.
4.
Wrap each stuffed jalapeño with one slice of bacon, making sure the filling is covered and the bacon seam is placed on the bottom.
5.
Preheat your Traeger grill to 225°F.
6.
Season the bacon-wrapped jalapeños lightly with pork and poultry rub if desired.
7.
Place on the grill and smoke for 2 hours.
8.
Increase grill temperature to 350°F and cook an additional 10–15 minutes until the bacon is crisp.
