Wood Choice is Critical

Desserts are sponges. They absorb smoke much faster than meat. Stick to mild woods like Pecan, Apple, or Cherry. Avoid Mesquite at all costs, or your Smoked Dessert Recipes will taste like an ashtray rather than a treat.

Use the Right Vessel

A seasoned cast-iron skillet is your best friend here. It stabilizes the temperature and creates incredible crusts on cobblers and brownies. For delicate items like cream cheese-based desserts, a springform pan placed on a baking sheet works wonders.

Watch the Sugar
