Preheat the Grill. Preheat your grill to 400°F.

Prepare the Filling. In a large bowl beat the eggs, egg yolk, pumpkin, and brown sugar until smooth.

3.

Add Remaining Ingredients. Whisk in evaporated milk, ginger paste, cinnamon, salt, and allspice until fully combined.

4.

Fill the Crust. Pour the filling into the unbaked pie crust.

5.

Bake. Place the pie on the grill and bake for 50–60 minutes, or until the center is set with a slight jiggle.

6.

Chill. Allow the pie to cool completely, then refrigerate overnight before serving.

7.

Serve. Top with smoked maple nuts and whipped cream before serving.

Smoked Maple Nuts

Preheat the Grill. Preheat your grill to 250°F.

Prepare the Coating. In a large bowl whisk together maple syrup, egg whites, sugar, and cinnamon.

3.

Coat the Nuts. Add the nuts and toss until evenly coated.

4.

Prepare for Smoking. Spread the nuts evenly on a silicone-lined baking sheet. Sprinkle with sea salt.

5.

Smoke. Place on the grill and cook for 2–3 hours, stirring every 30 minutes, until the nuts are dried and caramelized.

6.

Cool. Allow the nuts to cool completely before serving or storing.
