Ingredients
- 1 large head cauliflower, cut into bite-sized florets
- 2 tablespoons olive oil
- Neutral oil, for the griddle
- 1 teaspoon garlic powder
- 1/2 tsp black pepper
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup buffalo wing sauce
- 2 tablespoons melted butter
Optional for serving
- Crumbled blue cheese
- Sliced green onions
- Ranch or blue cheese dressing
Instructions

Preheat the griddle. Preheat the Flatrock griddle to medium heat.

Season the cauliflower. In a large bowl toss the cauliflower florets with olive oil, garlic powder, smoked paprika, salt, and black pepper.

Cook the cauliflower. Lightly oil the griddle surface. Spread the cauliflower in a single layer and cook for 4–5 minutes per side, turning occasionally, until tender with charred edges.

Prepare the buffalo sauce. In a small bowl mix the buffalo wing sauce with the melted butter.

Glaze the cauliflower. Drizzle the buffalo sauce over the cauliflower and toss with spatulas or tongs until evenly coated. Cook for 1–2 minutes more until the sauce lightly caramelizes.

Serve. Transfer to a serving platter and garnish with crumbled blue cheese and sliced green onions if desired. Serve with ranch or blue cheese dressing.
