Ingredients
- Whole garlic bulbs
- Olive oil
- Kosher salt
- Finely ground black pepper
Instructions
1.
Prepare the Garlic. Trim the tops off each garlic bulb just enough to expose the cloves.

Season. Place the garlic bulbs on a foil-lined baking sheet. Drizzle with olive oil and season with kosher salt and black pepper.
3.
Preheat Grill. Preheat your Traeger grill to 250°F.

Smoke Roast. Place the tray on the grill and cook uncovered for 1–2 hours, until the garlic begins to turn golden.
5.
Finish Cooking. Add 1–2 cups of water to the bottom of the tray, just enough to reach about ¼ inch deep. Cover the tray with foil and continue cooking for 30–45 minutes, until the cloves are soft and spreadable.
6.
Cool and Store. Remove from tray and wipe any water from the bottoms of the garlic bulbs. Allow the garlic to cool to room temperature. Wrap each bulb individually and store in a freezer-safe container or bag for later use.
