Roasting peppers over high heat brings out their natural sweetness and creates deep, smoky flavor. These peppers are incredibly versatile and can be used in sauces, salads, sandwiches, pasta, or blended into dips.

Preheat the grill. Preheat the Traeger grill to 500°F.

Roast the peppers. Place the whole red peppers directly on the grill grates. Cook for 25–30 minutes, turning occasionally, until the skins are blistered and charred on all sides.

3.

Steam the peppers. Transfer the roasted peppers to a large bowl and cover tightly with plastic wrap. Let them sit for about 1 hour to steam and soften.

4.

Peel and clean. Remove the peppers from the bowl. Peel off the charred skins and discard them along with the stems, seeds, and membranes.

5.

Use or store. The roasted peppers are now ready to use in recipes or store in the refrigerator.
