Basic BBQ Tips for Every Pitmaster
- If you’re looking, you’re not cooking. Keep that lid closed and let the heat and smoke do their job.
- Apply sauce only in the last few minutes of cooking. Sugar burns fast — timing is everything. Give it the Diva Q 10 that’s 10° in which to set the sauce. If your meat is done at 165°F, then Sauce at 155°F you don’t want the sauce overcooked & you don’t want the sauce undercooked.
- You don’t boil steak, so don’t boil your ribs. Low and slow beats rushed and ruined every time.
- Clean your grill. A clean grill is a happy grill — and a happy grill makes better food. You don’t eat off of dirty plates so don’t eat off of a dirty grill.
- A rack of ribs takes about 4-6 beers. That’s one beer per hour in BBQ time. Pace yourself accordingly.
- Life is too short for bad BBQ®. Don’t settle for less than smoky, juicy perfection.
- Have fun! Grilling outdoors is your escape — relax, cook, and enjoy the moment.
- Have patience. It’s done when it’s done — not a minute before. And always have options for cocktails.
- Don’t squish your brisket. You’re squeezing out all the deliciousness you worked for.
- Stop the sticky! Oil your grill grates (or your meat) before it goes on.
- Get your grill on. Have everything prepped before you fire it up — sauces, tools, and sides.
- Pink can be okay. Trust your thermometer, not old myths. Use a digital probe to know for sure.
- Give it a rest already. Let your meats rest before slicing — juices need time to redistribute.
- Take it off! Remove the membrane from the back of your ribs so your rub can work its magic.
- Preheat properly. Always bring your grill up to the right temp before cooking.
- Keep the bad bugs out. Have two sets of tongs and plates — one for raw, one for cooked. Keep your hot foods, hot and your cold foods, cold.
- Know where your fire extinguisher is. And make sure it’s kitchen-rated.
- Never throw water on a grease fire. Keep baking soda and that extinguisher close at hand.
- Give it some space. Don’t crowd the grill — airflow equals better crust, color, and flavor.
