Ingredients
- 2¼ tsp active dry yeast
- 2½ cups all-purpose flour
- 1 cup warm water
- 2 tsp sugar
- 2 tbsp oil
- 1 tsp salt
- ¼ cup flour, for kneading
- ¼ cup flour, for rolling
- 1 tsp oil, for bowl
- Non-stick spray or olive oil
Instructions

Activate Yeast: In a small bowl combine yeast, ¼ cup flour, warm water, and sugar. Let sit for 15 minutes until frothy.

Make the Dough: In a large bowl combine the remaining flour and salt. Add the yeast mixture and oil. Mix and knead for about 10 minutes until smooth. The dough may be slightly sticky.

First Rise: Lightly oil a bowl and place the dough inside. Cover with plastic wrap and let rise for 1 hour, or until doubled in size.

Divide and Rest: Punch down the dough and place on a lightly floured surface. Divide into 6 equal pieces and roll into smooth balls. Cover with a clean kitchen towel and let rest for 20 minutes.

Preheat Grill: Preheat grill to 450°F. Place a cast iron pan, griddle, or pizza stone on the grill to heat.

Roll the Pitas: On a lightly floured surface roll each dough ball to 6–8 inches wide and about ⅛ inch thick.

Cook the Pitas: Lightly oil the hot cooking surface. Place the dough onto the hot pan or griddle and cook for about 2 minutes. Flip and cook for about 1 minute, until lightly browned and cooked through.
8.
Keep Warm: Remove from the grill and keep warm under a lightly damp towel until ready to serve.
