Diva’s 3 Rules for Outdoor Baking

Master Indirect Heat

You cannot bake directly over the fire. That burns the bottom before the middle is done. Always set up for indirect heat, push the coals to one side or turn off the middle burners, to create a convection oven effect.

Cast Iron is King

A cast-iron skillet is the best tool for this job. It regulates heat evenly and protects your dough from scorching. Plus, serving Cornbread on Traeger straight from the skillet looks fantastic on the table.

Keep the Smoke Clean

You want a hint of wood flavor, not a heavy blanket of ash. If you are baking something delicate like biscuits or pie, ensure your fire is burning clean and thin. Heavy white smoke will make your bread taste bitter.

Can you bake bread on a grill?
A grill with a lid is essentially a convection oven. As long as you manage the temperature and keep the heat indirect, you can bake anything from cookies to sourdough. The airflow in a grill actually helps create a superior crust compared to many indoor ovens.
Cornbread on Traeger or any smoker is simple. Preheat your cast iron skillet inside the smoker while it comes up to temp (usually 375°F or 400°F). Grease the hot skillet, pour in your batter, and close the lid. The hot iron gives you a crispy crust while the smoke adds a subtle depth.
On a gas grill, light the outside burners and leave the middle burner off. Place your baking sheet or skillet in the middle (the cool zone). This allows hot air to circulate around the food without direct flame hitting the pan.
Generally, no. You can stick to the times listed in the recipe. However, grills can fluctuate more than indoor ovens, so rely on visual cues. If the top is browning too fast, tent it loosely with foil.
Stick to mild woods. Maple, Pecan, and Fruit woods (Apple/Cherry) are perfect for baked goods. Avoid Mesquite or Hickory, as their strong flavor profile can overpower the delicate taste of flour and butter.
